How we make Green chilli pickles-
We hand pick the chillies then they are washed, dried and then we chop off the tails.
It is then mixed with salt and turmeric, and lemon juice. It is kept in sun for 2-3 days to remove extra moisture
After green chilli gets soft, we add natural spices to it. But with a minimum quantity The taste of the pickle is determined by the heat of the chilies.

How Red chilli pickles are made-
Hand-picked chilli is washed and their tails are chopped off.
Then the seeds are removed from the Chillies, to make space to stuff masala in chillies.
Seeds are then mixed with spices and mustard oil. The seeds helps to add flavour and texture.
These masala are then added to Red chilli carefully so that red chilli didn’t lose it shape.
Then Red chilli is kept in the sun for drying.

How Nimbu ka achar are made-
Firstly, handpicked Lemons are washed. Let it dry in sun. Before washing it, rub the lemons on a hard surface to remove its bitterness.
Cut the lemon into 6-8 small pieces and grind the ginger. Cut the green chillies into two pieces after chopping their tails.
Mixed all three ingredients(Lemon, Ginger and Green chillies well) add juice as per the lemon.
Now mix all the remaining ingredents into the mixture.
Keep it in sun for few days(5-6 days)

How we make mango pickles-
Mangoes are washed, dried, and sliced into bite-sized pieces before they arrive at our factory.
It is then mixed with salt and turmeric and is removed after 24 hours. The mango retains its natural freshness due to this. Due to this mango removes its excess water.
Mango is drained with leached water and then different masala, mustard oil, and lime juice are added. After mixing it well, it is left for 3-4 days to mature which helps it to convert it into green & yellow, and takes darker shades. The flavour of the pickle gets activated.

How we make Amla pickles-
The Indian Gooseberry pickle or Amala ka achar is made by the traditional method
- Amlas are handpicked, washed, and steamed for a few minutes.
- Amla is cut into pieces once it gets soft, the seeds are then taken out, and the moisture is removed by leaving it to dry in the sun.
- Salt and turmeric are then added once the amla has dried, and the mixture is then left in the sun for an extra day or two to dry completely.
- Now spices are properly mixed. The key spices are cumin and mustard seeds. Amchoor is also added which is used to provide amla its sourness.
- After mixing it well keep it in the sun for a couple of days.
